EATERY IS OPEN - IT'S ALL GREEK TO ME

I am an Irish/German girl that married a Greek guy. When I was dating him, his Aunt Cally gave me a cookbook it is called The Odyssey of Greek Cooking. It was made by The Greek Ladies Philoptochos Society of SS Constantine and Helen Greek Orthodox Church. I love this cookbook and have made almost everything in it. When I first started cooking Greek food, I stuck to the recipe, now I have added my own flare. I hope you enjoy!

MOUSSAKA
2 large eggplants
6 medium ptoatoes, peeled and sliced 1/8 inch thick
1 1/2 pounds of ground beef
1 cup olive oil
2 medium onions
1 1/2 cups of tomato sauce
1/2 stick of butter
1/2 cup of bread crumbs
1 teaspoon of cinnamon
2 cloves of garlic chopped
salt and pepper


Wash eggplant, slice into 1/4 inch thick pieces. Sprinkle with salt and let stand for 10 minutes.
Rinse in cold water and pat dry with paper towels. Oil cookie sheet and place eggplant and sliced potatoes side by side. Brush tops lighting with oil. Broil in oven until slightly browned. Turn on other side and also brown. Repeat all pieces. As eggplant and potatoes are browning, prepare meat. Heat butter in frying pan over medium heat. Saute meat until brown add onion and garlic.

Add bread crumbs on the bottom of a 11 x 18 inch pan. Place a layer of potatoes side by side in pan. Spread with meat filling. Add layer of eggplant and keep alternating with meat, potatoes, and eggplant until you have used it all up. Cover with Cream Sauce bake in a preheated 350' oven for 1 hour. Serves 8.

CREAM SAUCE
1/2 lb butter
4 cups milk
3 tablespoons of flour
4 eggs well beaten
1/2 cup grated Kefalotiri or Parmesan cheese

Beat eggs, set aside. Bring 3 cups of milk to a boil over a medium heat. Add butter, stirring until melted set aside. Dilute flour in 1 cup of cold milk. Add to egg. Add another cup of warm milk to eggd and heat again. Add mixture to heated milk. Put on stove again over medium heat, stirring constantly until thick. Remove from heat and add to the top of Moussaka.
